Spice up your meal with a side of salsa!
Salsa, which means “sauce” in Spanish, can take a variety of forms. This one uses fresh tomatoes, bell peppers and garlic, 3 crops that our Community Health and Outreach team grows and harvests at Morningside Urban Farm. Every delicious bite includes vitamin C, potassium and a boost of hydration. With fewer than 40 calories per serving, it may also help you burn fat and stabilize your blood sugar.
Ingredients:
2 cups diced medium-large tomatoes (about four)
1/4 cup chopped bell pepper
1/4 cup chopped white onion
2 teaspoons minced jalapeño peppers (remove seeds for less heat)
1 small garlic clove, minced
3 tablespoons chopped fresh cilantro (optional)
1 - 1/2 teaspoons lime juice
salt to taste
Preparation:
- Combine all the ingredients in a bowl.
- Optional: If you want your homemade salsa to have a smoother texture, pulse half of it in a food processor, then combine it with the remaining chunky half.
- Cover tightly and refrigerate for up to 5 days.
