Ingredients:
2 cups cherry tomatoes, quartered
½ yellow onion, minced
4 cucumbers, diced
4 – 5 shishito peppers, deseeded and thinly sliced
Juice of 2 limes
1 tablespoon extra-virgin olive oil
Salt to taste
Preparation:
- In a large bowl, combine the chopped the vegetables
- Mix in lime juice, olive oil and salt, then toss gently to combine
- Cover tightly and refrigerate for up to 4 days
