Sometimes mistaken as red cabbage, radicchio is a member of the chicory family and is often referred to as Italian chicory.

It is also great for heart health, preventing the hardening of arteries and helping to decrease cholesterol levels.
Plus it adds a nice punch of color and zesty bite to this summer side dish.
Recipe tip: To add more flavor to this radicchio salad, roast the corn on a grill or grill pan, then cut the corn off the cob.
Ingredients:
3 tablespoons olive oil
2 limes
1 tablespoon ground cumin
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1 head bibb lettuce, washed, spun dry and coarsely chopped
1 head radicchio, cut into bite-size pieces
15 ounces canned black beans, drained and rinsed
1 pint cherry tomatoes, halved
1 cup corn, kernels cut off of cob
1 cup roasted red peppers, jarred in water
1/2 cup fresh cilantro
1/4 cup green olives, pitted and coarsely chopped
1/4 cup pumpkin seeds
Preparation:
- Place the oil, lime juice, cumin, salt and cayenne pepper in a large bowl and whisk to combine.
- Add the remaining ingredients to the bowl and toss gently to combine. Serve immediately.
