Orange Shrimp Stir Fry

Ingredients:
2 tablespoons olive oil
3 raw carrots
1 yellow squash
1 cup snap peas
1 red pepper
8 ounces of raw shrimp
1/2 cup orange juice
3 tablespoons low sodium soy sauce
1 teaspoon ground ginger
1 tablespoon grated orange zest
2 tablespoons cornstarch
Preparation:
  1. In a large pan, cook shrimp in olive oil over medium-high heat for 3 – 4 minutes on each side, until pink on both sides.
  2. Meanwhile, dice carrots, squash, snap peas and red pepper.
  3. Set cooked shrimp aside, add vegetable mixture to the pan, cover and cook for 5 – 10 minutes.
  4. In a small bowl, whisk together orange juice, soy sauce, cornstarch, orange zest and ginger.
  5. Combine shrimp and sauce mixture back into vegetable mixture. Heat on high, stirring consistently for 3 – 5 minutes.
  6. Serve with pasta or rice. Enjoy!
