Cooler mornings call for starting the day with a warm bowl of oats and quinoa porridge with fresh fruit!
"Oats are high in fiber, which helps reduce cholesterol, lower blood sugar levels and improves your gut health," says Robyn Rohrig, R.D.-N. at Carilion Clinic. "It also helps you feel fuller, longer."
Quinoa is high in protein and minerals such as iron, magnesium, potassium and zinc. Though it is technically a seed, you can find quinoa in the rice and grains aisle of your grocery store.
Give this recipe a try and change it up with your favorite milk or milk alternative and seasonal fruits!
Ingredients:
1 1/2 cup unsweetened almond milk
1/2 cup rolled or old-fashioned oats, plain
1/4 cup quinoa
1/4 cup blueberries
1/4 cup chopped mango
1/2 tsp. honey
Preparation:
- Place the almond milk, oats and quinoa in a saucepan and bring to a boil over medium-high heat. Reduce heat to a simmer and cook, stirring occasionally, until porridge begins to form, about 30 minutes.
- Scoop porridge into a bowl and top with blueberries and mango.
- Drizzle with honey and serve.
