Maple Walnut Granola

Your kids are back in school, and time in the morning is precious. What could be quicker than serving up some granola?

This easy, healthy recipe for homemade granola comes from the American Institute for Cancer Research. The oats offer minerals, vitamins and fiber, and the walnuts provide lots of antioxidants.

If you have any left over after breakfast, pack kid-sized servings as a nourishing snack or sprinkle over ice cream for a healthy crunch!

Ingredients:
nonstick cooking spray
3 cups old-fashioned oats
1/4 cup whole-wheat flour
1/4 cup chopped English walnuts
1/2 teaspoon cinnamon
pinch of salt
1/3 cup maple syrup
1/3 cup canola oil
1 teaspoon vanilla extract
Preparation:
  1. Preheat oven to 300 degrees Fahrenheit.
  2. Lightly coat a large baking sheet with cooking spray.
  3. In a large bowl, combine oats, flour, walnuts, cinnamon and salt.
  4. In a separate bowl, whisk together maple syrup, oil and vanilla.
  5. Add the syrup mix to the oat mixture and stir well to coat.
  6. Spread the mixture evenly over the baking sheet.
  7. Bake for 30 minutes.
  8. Remove the tray from the oven and stir, breaking up any lumps.
  9. Return to the oven and bake an additional 20 minutes.
  10. Remove from the oven and allow granola to cool completely.
  11. Store in an airtight container.
