Fire and Ice Watermelon Salad

The blend of watermelon, green peppers, cilantro and jalepenos in this recipe gives it just the right blend of sweet and spicy. Plus, it is a perfect twist on a traditional summer treat that is also so good for you.

Carilion Clinic's Dining and Nutrition team recommends watermelon as a good source of the phytonutrient lycopene, which is especially good for prostate health.

It's also a great way to stay hydrated! Watermelon is also 92 percent water in addition to containing dietary fiber and vitamins A and D. 

Ingredients:
3 cups chopped watermelon
1/2 cup chopped green bell pepper
1 tablespoon chopped jalapeno pepper
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
1 tablespoon chopped green onions
Preparation:
  1. In a large bowl, combine the watermelon, green bell pepper, lime juice, cilantro, green onions, jalapeno and garlic salt.
  2. Mix well and serve.
