Fall Harvest Delicata Squash Pasta

Get in the mood for fall with this pasta dish featuring delicata squash and fresh tomatoes. Light, sweet and slightly nutty, delicata squash is packed with vitamins A, C, E and K, fiber and antioxidants to support eye health and night vision.

Ingredients:
1 tablespoon olive oil
1 medium delicata squash, peeled, seeded and cubed
3 – 4 medium tomatoes, diced
½ large white onion, chopped
2 garlic cloves, unpeeled
1 teaspoon oregano
1 teaspoon red chili flakes (optional)
1 cup pasta water (or vegetable broth)
1 pound pasta
Salt and pepper to taste
Preparation:
  1. Preheat oven to 400 °F. Line a baking sheet with parchment.
  2. Toss delicata squash, tomatoes, onion and garlic with olive oil, salt and pepper. Roast 25 minutes until golden and tender.
  3. Peel garlic and blend with roasted veggies and 1 cup pasta water (or vegetable broth) until smooth.
  4. In a pot, heat olive oil, oregano and chili flakes (optional). Stir in sauce and simmer for 3 – 4 minutes.
  5. Add cooked pasta and toss extra pasta water to create a sauce. Adjust seasonings to taste.
  6. Serve warm, garnish as desired and enjoy!
