Chicken Chili: Cold Weather Comfort Food

When cold winds are blowing outside, a bowl of chili can be counted on to keep you warm inside.

Try this healthy, hearty chicken chili recipe provided by a Carilion Clinic registered dietitian. Not only is it loaded with protein and fiber, but it has a secret ingredient (a jar of your favorite salsa!) that makes it easier than ever to fill your home with the coziness only a pot of chili can offer. 

Ingredients:
1 tablespoon olive oil
2 cups cooked chicken breast, cubed
2 cups chicken broth
1 large onion, chopped
2 large cans chopped green chilies
2 cans cannellini beans
6 garlic cloves, chopped
1 large jar of salsa
1 teaspoon each cumin, oregano and tarragon
1/8 – 1/4 teaspoon cayenne pepper
1 can white corn
Preparation:
  1. In a large soup pot, saute the onions and garlic in the oil until tender.
  2. Stir in the spices and cook 1 minute.
  3. Add the remaining ingredients and simmer for 1 hour.
