Think campfires are just for s'mores? This garlicky green bean recipe will have you thinking again.
According to Angela Charlton, a registered dietitian and nutritionist with Carilion's Community Health and Outreach team, garlic contains potent phytonutrients that offer significant health benefits.
“The phytonutrients are actually formed on chopping or crushing, so to reap full benefit, let your prepared garlic sit 15 minutes before cooking,” she said.
Fresh green beans are a rich source of dietary fiber and folate. Recipes that prepare them with olive oil also contain monounsaturated fatty acids, which in moderation can be beneficial to your overall cholesterol profile.
This recipe can be made inside too; just preheat the oven to 400 degrees and roast in a baking pan for 10 to15 minutes.
Ingredients:
1 lb. green beans
4 cloves garlic, crushed or thinly sliced
1 tbsp. olive oil
1/4 tsp. sea salt
1/4 tsp. sea salt
Preparation:
- Trim beans and toss with garlic on four sheets of aluminum foil.
- Drizzle with oil and sprinkle with salt and pepper.
- Wrap the foil sheets into packets and place on a rack a few inches over grill or coals.
- Roast for 10 minutes or until crisp-tender.
